A road that smells of the countryside, of hills, of tradition.
Here we reopened Botteganova with the desire to carry on authentic cuisine — made the way it used to be, but with the care and attention it deserves today.
The name of our restaurant in Siena, Antica Trattoria Botteganova, already says a lot about us:
"Ancient" like the Sienese recipes we honor every day, "Nova" like the fresh touch added by those who live, study, and serve that cuisine today.
Usiamo ingredienti locali, conosciamo i nostri produttori, scegliamo solo cantine del territorio.
Every dish that reaches the table has something to say.
The waiter tells you its story. The chef prepares it before your eyes.
La Chianina c’è. La Cinta Senese anche. Il tartufo, pure.

Il nostro menù nasce dalla voglia di far desire to bring back to life dishes that, here in Siena, are not just recipes — they are memories, seasons, family, and territory.
There are crostini, peposo, handmade pasta, and pecorino.
Chianina, Cinta Senese, and truffle.
Sunday dishes, peasant cuisine, dishes that speak of vineyards, woods, and changing seasons.
And then there are those that change with time, because our menu follows the rhythm of the seasons and the products of our land.

We’ve also thought of those with with specific dietary needs, offeringgluten-free dishes and vegetarian variationsalways in line with our idea of Sienese cuisine: welcoming and authentic.



Antica Trattoria Botteganova ha conosciuto il suo apice sotto la guida di Hector Silvestri, which, with its authentic cuisine rooted in Sienese tradition, has achieved a Michelin star.
Today we take up this legacy with respect and determination.
Portiamo avanti la sua idea di cucina: ingredienti locali, piatti narrati, ritualità, legame profondo con il territorio.
Non vogliamo riscrivere la storia, ma continuarla — con lo stesso amore per la verità della cucina toscana.
